Plecing kangkung is typical Indonesian cuisine originating from the area of Lombok. Plecing kangkung consists of boiled kangkung and served in a cool and fresh condition with tomato sauce, made from cayenne pepper, salt, terasi and tomato, and sometimes given a drop of lime juice.
As a companion Chicken taliwang, plecing kangkung usually served with additional vegetables such as bean sprouts, long beans, fried peanuts, or urap.
Kangkung used for this dish is also very distinctive, unlike vegetable kangkung plants that are for example in Java, but water spinach is usually grown in a river that flows by a certain method, which produces spinach with a large crisp bar.
